Lemon Meringue Tartlet

I had one of this lemon meringue tartlet from one of the high street pizza restaurant, but so disappointed, I think it must came from some frozen company.

It gave  me the thought to make it by myself. That’s easy for me, because I made the lemon curd and some tart pastry before, so, just assemble them together. It is the one here!


Lemon Meringue Tartlet



  1. Prepare the oven to 350°F/180°C/160C (fan oven), or gas mark 4.
  2. Bake blinded six to eight 4inch tartlets with the baking beans for about 10 minutes, take it out from the oven and cool on a wire rack.
  3. Use a clean big bowl, whisk the egg white about 1 minute and add the caster sugar in and continue to whisk until it form a hook when you hold up the whisk.
  4. Fill up the baked tartlets base with suitable amount of lemon curd and a dallop of whisked egg white on top, put under the preheat grill to brown the meringue top, done! Just as simple as that!
