Wow, I got a big bargain today, bought two large size pineapples from supermarket, just 80p each, isn’t that good price? So I grab two of them in my trolley, pay and go! :p

Can’t wait to eat it, I just step in the kitchen and the fresh pineapple is already on the chopping board. They’re not too ripe but still have a bit green. It is so juicy and I can’t remember how many I stuffed in my mouth.

Pineapple are consumed both fresh and cooked, canned, juiced, are found in a wide array of food stuffs –dessert, fruit salad, jam, yogurt, ice cream.

This recipe, I added some of the cubed pineapple, it taste so nice and fresh.

Pineapple Fried Rice   鳳梨炒飯

Ingredient:       (serve 2)

  1.  2 bowls of boiled rice
  2.  1 1/2 cup of frozen mixed vegetables, defrosted
  3.  1/2 to 3/4 cup of diced pineapple, (canned or fresh )
  4.  1 egg, beaten
  5. Small brunch of fresh coriander or flat parsley, chopped
  6.  A handful of roasted cashew nut
  7.  1 tbsp of toasted black and white sesame seeds
  8.  1 tbsp of light soy sauce
  9.  1 tsp of sea salt
  10.  1 tsp of sesame seed oil
  11.  1 tbsp of vegetable oil

Method: 

  • Prepared a wok over high heat with 1 tbsp of oil, add the egg in and stir it like scramble egg, add the boiled rice in and quickly stir it with the egg together, transfer it to a plate.
  • Still using the same wok, add the frozen vegetables in and stir it for 3 minutes, add the fried rice and mix altogether, keep stirring until the rice turn a bit dry and add the diced pineapple, herbs and quick stir it, then season it with the soy sauce , salt and sesame seed oil. Off heat.
  • Put the fried rice in a plate or in a pineapple shell, just like mine, top with cashew nuts, sesame seed and serve.

Note: 

  • It is an easy and quick to prepare dish, and have lots of variety of choice ingredients to add in, like vegetarian quorn pieces or sliced vegetarian sausage.
  • Or, even you’re not vegetarian, you can add some fried chorizo sausage in, it still so delicious!
