You know me well, do you? I really hate to waste any edible food, Need to finish all the pineapple now! This pineapple upside down cake is less sugar, less fat content, so if you’re a  sweet tooth person, add more about 30g of sugar with all the base ingredient to make a rich syrup.

For the base ingredient:

  1. 2 tbsp butter
  2. 50g demerara sugar
  3. few halved glaced cherries
  4. 1 cup of roughly chopped fresh chunky pineapples

For the cake ingredient:

  1. 195g   (1 1/2 cup) of cake flour or self-raising flour, sieved
  2. 110g   ( 1/2 cup) butter
  3. 125g to 150g golden caster sugar
  4. 1 tsp vanilla extract
  5. 2 large eggs, separated
  6. 120ml semi-skimmed milk
  7. 1/4 tsp cream of tartar

Method: 

  • Preheat the oven to 350°F/180°C/160° (fan oven), or gas mark 4.
  • Prepared the base sugar syrup first by melting the butter and sugar into a little saucepan over medium to low heat.
  • Prepared a lined and greased 8″ round cake tin, put the halved glaced cherries in the middle of the cake tin, arrange the chunky pineapples in the bottom of the tin. Pour the melted sugar syrup over the pineapple.
  • Put the egg white into a mixing bowl with the cream of tartar, use electric hand whisk to whisk the egg white until peak form.
  • Then in another bowl use the same electric hand whisk to whisk together with the butter, sugar and egg yolks until all frothy, add the vanilla extract and milk, mix together, then fold the sieved self-raising flour into the yolk mixture.
  • Fold 1/3 of the egg white into the flour mixture, then follow the remaining egg white, make sure all ingredients mix frothy and smoothy.
  • Pour over the pineapple and bake into the heated oven for about 55 to 60 minutes, until it cooked and golden brown.
  • Best to serve warm with some cream, Mmmmm, nice!
