Warm Quinoa Salad with Mixed Sweet Pepper

Quinoa, a species of goosefoot, is a grain-like crop grown primarily for its edible seeds. It is easy to cook than other whole grains – just 10 to 15 minutes.  Quinoa tastes great on its own.  Add a bit of olive oil, sea salt and lemon juice and – yum!

Quinoa has the highest protein content, nil saturated fat and nil cholesterol, so it’s perfect for vegetarians and vegans.Very good nutrition!

It provides all 9 essential amino acids and lots of minerals, making it a complete protein.  Quinoa is a gluten-free whole grain, and is almost always organic.

Ingredient:        (serve 1)

  1. 1/4 cup  Red quinoa, toasted
  2. 1/2 cup   Vegetable stock
  3. 1 tsp   Freshly grated lemon zest and juice
  4. 1/8 cup   red & yellow pepper, diced
  5. A handful of walnut, toasted
  6. 1/2 tbsp   Extra virgin olive oil
  7. Few sprigs of fresh herbs: coriander or parsley or anything you prefer
  8. Sea salt and freshly ground black pepper
  9. Freshly chopped red chilli

Method: 

  • Bring the vegetable stock to a boil in a small saucepan over high heat. Add the quinoa into the stock and bring back to a boil. Turn the heat down, cover with a lid on and simmer for about 6 to 8 minutes.
  • Drain any remaining water, if necessary.
  • Whisk lemon juice and zest, olive oil, salt and pepper in a separate bowl, add the diced peppers into the quinoa mixture. Add the whisked seasoning and toss to combine altogether. Then, top with fresh herbs and toasted walnut.
Notes: 
  • Toasting the grain before cooking, it will enhances its flavor, because I did try once before without toasting, I felt that has a bitter taste, so trust me, toast it before you cook, that is my experiment.
