Sweet Potato Pasta
This meal was a bit over my diet plan, because I felt hungry, so I ate a bit more portion. Oh dear, then I found out the result later! 😦 I think I need to do a bit more exercise to burn the calories off. I wish it work! But luckily, today’s lunch is only salad, then it can balance off. just excuse, hehe silly me. :p
This is a quick and simple pasta dish, it is for vegetarian too. But if you’re a meat eater, you can add some fried bacon cube or tuna or salmon, it’s up to you.
Sweet Potato Pasta
Ingredient: ( serve 1 or 2 )
- 100g Sweet potato, peeled and cut into small cubes
- 100g Dry Macaroni ( suppose only 75g )
- 30g Each of frozen soy beans and frozen sweetcorn
- 1 tbsp of semi-skimmed milk
- 35g Fat free Greek yogurt
- 25g Lighter Mature grated cheese ( suppose only 20g )
- Sea salt and freshly ground black pepper
Method:
- Cook the sweet potato cubes in simmering water for about 10 minutes, until tender and soft, drain well.
- Cook the pasta in a large saucepan for 6 to 8 minutes until tender, drain then return to the saucepan.
- Stir the sweet potato cubes and frozen beans and sweetcorn through the pasta. Add the milk and yogurt and cook gently for 2 minutes.
- Sprinkled the cheese on top and put under a hot grill for about 5 minutes, let it start to turn brown. Sprinkled with salt and black pepper.
Note:
- You could use other kind of frozen vegetables, or even add more quantity, that is healthier.
- If you haven’t got sweet potato or don’t it, could use the butternut squash instead.
