Can’t wait to make this patties/burgers, when I read or local Aldi’s magazine. It has few recipes printed inside, but few of them are vegetarian, even this burger is not vegetarian, but I just love it. So, I want to exchange some of the ingredients and add more herbs, spice in it, and create this lovely burger. I don’t think vegetarian is awkward, just use your passion and creation, of course by your heart, it will be a wonderful dishes. And it can be more delicious than the meat as well.

Carrot, Lentil and Cheddar Patties/Burger

Ingredient: 

  1.   120g Red lentil,   ( soak in water for about an hour )
  2.   2 carrots, grated    ( about 200g )
  3.   125g Wholemeal breadcrumbs   ( or use white breadcrumbs )
  4.   50g Ligher Mature grated cheese     ( or any hard cheese you like )
  5.   2 Large eggs, beaten
  6.   1 small onion, finely chopped         ( I didn’t use it )
  7.   1 tsp of dry parsley,        ( can use fresh about 1 tbsp, chopped )
  8.   1 tsp of dry rosemary     ( can use fresh about  1 tbsp, chopped )
  9.   1/2 tsp of ground cayenne pepper
  10.   1 tsp sesame oil
  11.   Sea salt and freshly ground black pepper

Method: 

  • Preheat the oven to 400°F/200°C/180°C(fan oven), or gas mark 6. Lined a large baking tray.
  • Cook the red lentils in a saucepan with boiling water for about 3 to 5 minutes, drained, and pat dry it.
  • Put carrot, breadcrumbs, eggs, cheese, herbs and spice in a large mixing bowl, add the lentils and seasoning.
  • Shape the mixture into 8 burgers and arrange them on the prepared baking sheet. Bake for about 25 to 30 minutes until golden brown. Serve on the cos gem lettuce, or serve in warm pitta breads or lightly toasted burger buns.

Note:

  •  Remember to squeeze the soaked lentils before add into the other ingredients.
  • If the burger mixture is not stick together, can add one tbsp of flour in and shape it.
