If I found out that I gained a bit more calories during the first half day. Then I will prepare a light dinner for myself to balance my diet. I think that is fair, isn’t it?

Keeping 1200 calories a day, actually, I found that is not too easy during some days. Especially if I have my friends around or some special occasion. But the other day, I will take a serious low calories diet. Or just take a fruit and salad day.

This recipe is one of my salad day, it is low fat, low G.I. low calories as well. Each serving only 253 Calories, 47 carbs, 7 fats, 9 protein. If you want a bit more protein, add one boiled egg to it, it still a low fat, low calories recipe as well. And it is so yummy as well! Try it!

Ingredient:         ( serve : 1 )

  1.   1/4 cup dry bulgar wheat
  2.   2 pieces sun-dried tomato, finely chopped
  3.   15g Cucumber, unseeded, finely chopped
  4.   15g to 20g Greek feta cheese, grated
  5.    1/4 of whole green bell pepper, finely chopped  (about 15g)
  6.    1 Celery stick, finely chopped
  7.    1 tsp Fresh lemon juice
  8.    1 tsp Extra virgin olive oil
  9.    1/2 tbsp Fresh parsley, finely chopped
  10.   Sea salt and fresh ground black pepper

Method: 

  • Cook the bulgar wheat with vegetable stock, just following the packet instruction, set aside for later.
  • Combine all the other ingredients together, add the cooked bulgar wheat and toss. All done! Isn’t that easy?

Note: 

  • If you find it is too much work to prepare, that’s is not necessary finely chopped all the salad, just roughly chopped or do which way you like.
