Since I was put on diet again, I found out my carb. and sugar intake were a bit high. Then I took an action: study how to cut down this two trouble maker, I did cut down half of the bread everyday, but I still need to create more meals that are low in carbs. and sugar.

So, I wish someone can give me some ideas or recipes, that will be a great appreciate. Thanks!  🙂

Vegetarian Mexican Enchiladas with Cheese

Ingredient: 

  1.   100g Minced Quorn
  2.   1 Onion, chopped    (I haven’t used)
  3.   1 Clove of Garlic, minced    (I haven’t used)
  4.   1 canned of Chopped tomato  (400g)
  5.   1 canned of Kidney beans    (400g)
  6.   150g Frozen mixed vegetables
  7.   100g Fresh spinach, washed and chopped
  8.   1 Fresh red chilli, chopped
  9.   1 tbsp of Mexican Fajita seasoning
  10.   6 pieces of wraps or tortillas
  11.   85g Red Leicester cheese, grated

Method: 

  • Heat 1 tbsp of olive oil in a pan and cook 1 chopped onion, 1 chopped clove garlic and 1 deseeded and chopped red chilli for 2 mins until soft.
  • Add the minced quorn in and cook for 5 mins to brown. follow the mixed vegetables and the Mexican Fajita seasoning, then add the drain chopped tomato and kidney beans, test the taste before you add the salt, (maybe not need it).
  • Cook for 10 mins, stirring. Divide mince between 6 flour tortillas, grate over a little cheese and roll up. Place in a baking dish, spoon over any leftover sauce and grate on more cheese. Put under the hot grill  for 5 to 7 minutes until the cheese melted.
  • Serve hot with leaves salad.

Note: 

  • I found out that warm the tortillas in the mircowave for 30 second before you spoon the minced on the wrap, it can prevent the wrap breadk or crack, it is a good tips!
