Vegetarian Lettuce Roll

This lettuce roll always a popular starter in Chinese restaurant, they have the meat or vegetarian version to choose. For meat eater, you can use any kind of minced meat, like pork, chicken, lamb or beef. For me, of course has no meat, I used the minced quorn instead today, but you can use diced tofu, or create your own recipe, sometimes, I just use mixed vegetable, still really nice!

The vegetarian mushroom sauce can find in lots of Chinese supermarket. The special XO sauce was given by one of my friend, it such so nice and smell so good, but if you can’t find it, just add one more table spoon of mushroom sauce instead, the taste still really good.

Vegetarian Lettuce Roll 

Ingredient: 

  •   2 Little Gem Lettuce, washed and drained
  •   1 1/2 cup Minced quorn or diced tofu
  •   1 cup Frozen Mixed Vegetables (peas, carrots, sweetcorn, beans, cauliflower)
  •   1/2 cup Fresh Coriander, washed and finely chopped
  •   1 tbsp Vegetarian mushroom sauce
  •   2 tsp Vegetarian XO sauce   ( bought it from Hong Kong )
  •   1/2 tsp sugar, ground white pepper
  •   1 tsp Cornstarch mix with 1 tsp water for thickening
  •   1 Clove of garlic, minced            ( optional )
  •   Dash of rice wine          ( optional )

Method: 

  1. Washed the gem lettuce and only chose the outer leaves for wrap the minced, drained.
  2. If you use garlic, put the garlic into the wok over medium high heat for a minutes, add the minced quorn, stir fry for 2 to 3 minutes, add mixed vegetables and coriander, quick stir all the ingredients, then add the mushroom sauce and xo sauce, sugar and ground white pepper, adjust the seasoning by adding salt if you dersire. But I felt enough seasoning, so I haven’t add salt in it. that’s fine for me.
  3. At last, mix the cornstarch and water, add into the wok and quick stir for few seconds, sprinkle dash of rice wine then off heat.
  4. Spoon one or two table spoon on each gem lettuce leaves, served hot.

Note: 

  • In restaurant, they served with few deep fried vermicelli/rice noodle, they’re nice and crispy, but it was too much trouble for me, you can skip it just like me.
  • If you can get fresh water chestnut, finely chopped few of them, add in with the mixed vegetables, it will be more crunchy.
