Sweet Potato Fritters with Corn

I made corn fritters before, was nice, but I haven’t try sweet potato into my fritters, and I think sweet potato are better than potato, at least less carbonhydrate, right? Don’t know yet, will find out later!

Used the grated sweet potato is not easy than the normal potato, it was softer, when I tried to flip over for another side, they’re quite sloppy. But the taste was much better than potato, have a try, you can feel the good taste.

This time, I added a bit of chilli to make it but not too much ( cause I can’t eat too spicy ), the result that came out, was surprised to suit me. So, I can start to get used to a bit spicy in my cooking, yeah, not too much, just gradually build up. hehe.

If you think the batter was a bit thinner or runny, add 1 teaspoon of flour each time to reach the consistency that you desire. Don’t get too doughy.

Sweet Potato Fritters with Corn

Ingredient: 

  •   200 to 250g Sweet potato
  •   1 Small red chilli
  •   Small bunch of fresh coriander
  •   45g more of less, Plain flour
  •   150g Sweetcorn, fresh or frozen or canned
  •   2 eggs
  •   4 tbsp  Vegetable oil
  •   Salt and Black pepper

Method: 

  1. Peeled the sweet potato, and grated, sat in a bowl with water cover it, set aside.
  2. Chopped the coriander and red chilli finely, washed hands afterward.
  3. Cracked the eggs into a large mixing bowl, add oil and flour, whisk it until without any lumps, add the chilli, coriander, sweetcorn and drained sweet potato, mix it all evenly. Season well with salt and black pepper.
  4. Pit a tablespoon oil into a hot frying pan, take one large tablespoon of the batter onto the pan and start to fry for both sides, just few minutes for each side until you can see the fritters turn into golden brown and turn the other side. Repeat all the remaining batter.

Note: 

  • It could be a nice starter or snack, even you can make it smaller size for the fingers food for party.
  • If for children, skip the chilli, in case it will be too spicy for them.
