Just only fancy some light dessert with mango, because we bought few of them. And I made the mango pudding already, then I think of something else. How about make one without any hassle and simple, easy, light and no cook nor bake. Is this suit you as well?  But it is definitely for me today! 🙂

No-bake Mango Cheesecake

Ingredient:           ( make one 6″ cake )

  •   6 Ginger nut biscuits, digestive biscuits, rich tea or graham cracker
  •   ! 1/2 tbsp Coconut cream   ( top layer cream from canned coconut milk, or use unsalted butter )
  •   1 Mango, peeled and stoned
  •   200g Cream cheese
  •   50ml Whipped cream or double cream
  •   3 to 4g Agar Agar
  •   1 tsp Lemon juice
  •   50g Caster sugar

For the mango jelly :

  •   80g Mango puree
  •   125g Water
  •   2 to 3g Agar Agar
  •   20 to 30g Sugar      ( I used 20g )

Method: 

  1. For the cake base:  Crushed the biscuits into breadcrumbs, and add the coconut cream and mix, layered on the base of the cake tine, slightly press down. Chilled. 
  2. Peeled and stoned the mango, scoop out the flesh and blend it in a food processor into mango puree.
  3. Add the lemon juice into the mango puree and warm in the mircowave for 30 seconds, add the agar agar into the mango mixture, stir until melt.
  4. Whisk the cream chesse with the sugar until soft and smooth. Pour the mango mixture into it and stir to combine, follow by the whipping cream.
  5. Pour onto the cheesecake base and  refrigerate for few hours until firm.
  6. For the mango jelly:  Mix the sugar with agar agar, put water and mango puree into a small saucepan over low heat, let it just start the boil, add the sugar mixture and whisk until the sugar melt. Off heat and let it cool down for about 2 minutes, pour over the chilled cheesecake, and let it set, then serve.

Note: 

  • Use the coconut cream instead of the butter to make the cheesecake base was my first idea, so if you don’t like coconut cream, take the original use the butter, is fine!
  • Mango was our family’s favourite fruits, if you don’t like mango, use other fruits as you like, or why not try the strawberry puree, it will be good as well.
  • I did try to whip some of the coconut cream for garnish, but the weather was so warm, and it started to melt before I put on the top of the mango jelly, that’s why you can see the funny shape of the cream, hehe!
