A Perfect Spanish Gazpacho 西班牙蕃茄凍湯

A perfect meal for this weather, a lazy meal , a money-saver meal, a simple and easy meal, a refreshing meal, what else? Let me think…
A PERFECT GAZPACHO, have I said it right? Of course it is right for me! I can’t believe it how simple and easy to make, it only take me not more than three minutes to make this soup, ( actually include the chopping as well ).
What do you think to have a cold soup in this hot weather, the temperature reach to 30°C to 32°C about 86°F to 90°F !
And it only have few ingredients, and the vegetables was always sit in our fridge ( at least I am ). And the quantity are totally up to you, more or less, just feel free to adjust it. That’s why I haven’t write it down.
Ingredient include : 4 large vine of tomatoes, 1/2 cucumber, 1/2 green bell pepper, those are the main ingredients. Chopped all of them into chunky size.
And the rest of the ingredients are up to you now, they are the cloves of garlic ( I haven’t use it ), green or red jalapeno, apple cider vinegar, sea salt, black pepper, pinch of smoked paprika and extra virgin olive oil
One more thing is breadcrumbs, it is not necessary, if you want yours to be gluten-free, skip it. It is for thicken the soup, so I haven’t measure it. I used some of my stale bread from freezer.
How to make it: So so easy, dump the chopped vegetables into the blender or food processor, add the other rest of ingredients, remember to adjust for your own taste. Blend until smooth and add the seasoning. Then ready to serve.
Some people like to sieve it but I like the soup has the bitty, gritty feel ( it is 100% personal taste ), so if you don’t like it, just pass the mixture through a fine sieve. Then cover the soup and chill in the fridge until serve.
Note: Sometimes people like to roast the tomato first to get a good flavour, but I’m too lazy to do it. :p
