Since I wanted to give up meat and 100% to be a vegetarian. I rejected any meat since then.

But today, I cooked this dish called:  ‘ chicken wings’ , people must think it is meat?  So do I, when I saw this recipe from here, I found out that  the ‘chicken wing’ was made by ‘cauliflower’, so clever and creative. Look at the picture, you just can’t tell it is ‘chicken’ or ‘cauliflower’, funny isn’t it?

It is far more healthier than the meat version. This ‘chicken wings’ are  so juicy and tangy. Add a bit of spicy for extra, it give the dish more  interesting! With all the flavour, in the meantime  I made the vegan cheese sauce accompany with raw celery and carrot sticks,   you won’t feel any guilt from all of them,  except enjoy it!

I loved this idea, vegan cheese sauce used the cauliflower to substitute the normal cheese, and it was full of flavour, and add the vegetarian nutritional yeast for getting extra vitamin B12.

Vegan Spicy Buffalo ‘Chicken Wing’ with Cauliflower Cheese sauce

Ingredient: 

  •   1 cup Almond milk or any other nut milk, even soy milk or water 
  •   3/4 cup Plain flour or gluten-free flour,    ( I used the almond flour )
  •   2 tsp Garlic powder      ( Optional )
  •   1 Medium size cauliflower, chopped into pieces   ( better to cut the stalks shorter )
  •   1 tbsp olive oil
  •   1 cup Buffalo sauce / any hot sauce         ( I only have the hot sauce )

Method: 

  1. Preheat the oven to 425°F/ 220°C/ 200°C ( fan oven ), or gas mark 7.
  2. Mixe the milk, flour and garlic powder in a bowl and stir well, set aside.  Make the batter just a bit runny but not too thick will be easier to coat the ‘chicken’ , reserve the left over batter if it is too much.
  3. Roll the ‘chicken’ pieces to the flour mixture and spread into a baking dish. Bake for 20 minutes until the cauliflower cooked.
  4. Combine the hot sauce and olive oil in a small saucepan, put on low heat and stir well, let it cook to hot, not necessary boil. off heat
  5. Pour the hot sauce mixture all over the baked cauliflower.

Ingredient:           ( you can make half portion )

  • 2 cups of Water
  • 2 cups of Cauliflower florets, chopped into small pieces
  • 1 tsp Onion powder,    ( optional, I haven’t use it )
  • 2 cloves of Garlic, or use 1/2 tsp garlic powder        ( optional, I haven’t use it )
  • 1 tsp Smoked paprika
  • 1/4 tsp Mustard sauce
  • 1/8 tsp Ground turmeric
  • 1/3 cup Nutritional yeast
  • 1 tbsp Cornstarch
  • 1/2 tbsp Lemon juice
  • Sea salt to taste

Method: 

  1. Bring 2 cups of water to a boil in a saucepan, add the chopped cauliflower, paprika, mustard, turmeric , garlic and onion powder if you use. Cover with lid and turn the heat to low. Let it simmer until the cauliflower is easily comes apart when poked with a fork. Off heat.
  2. Let the cauliflower cool down for about 10 minutes first, pour all of them into a blender, add all the remaining ingredients. Blend it by starting on low first, then  increase the speed until all the ingredients turn into smooth and silky sauce.
  3. Pour all the sauce back into the saucepan, add sea salt to taste and over medium to low heat until it starts to bubble, whisk it during the cooking, Let it start to thicken, it take about 2 to 2 1/2 minutes. Better to serve hot.
Note: 
  • Bake the ‘chicken wing’ a bit longer time, the wing will get more crispier.
  • For more spicy, you can add more chilli powder or chipotle powder,
  • Add 1/2 tbsp cornstarch more to make more thicker sauce, that’s some people like it.
