Been to the farmer’s market this week, they got lots of fresh produce there. I bought the most fresh beetroots there with all the leaves on. We are not always seen the beetroot with leaves on sale in supermarket, but on market places , I grabbed a bunch with 4  fist size beetroots , they are really big size. I think I can make few dishes with it later this week. It only cost £1 for a bunch, worth it, worth it.🙂

I heard of ‘golden beet’, but I haven’t seen it before, only from the web.

One cup of boiled beet leaves has 39 calories and no fat, no cholesterol. One cup serving of beet leaves contains 8 g of carbohydrates,  that does not break down into fuel. maintaining the health of your bowels and digestive health in the form of fiber, Each serving has 4 g of fiber. One cup of beet leaves also provides you with 4 g of protein. Your body uses protein as a secondary source of fuel; however, protein also helps your body make muscle, repairs tissues and cells and promotes the health of your immune system.

One cup of beet leaves contains 60 percent Vitamin C of the daily recommended intake, vitamin C helps repair tissues and cells in your body, making it vital for wound healing.

It is the vitamin A content that sets beet leaves apart, though — each 1-cup serving provides 220 percent of the daily recommended intake. Your immune system depends on vitamin A, working with vitamin C to help make you well when you are sick or injured. Vitamin A also helps maintain your vision, particularly your night vision.

It also has  Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Calcium, Iron, Magnesium, Potassium, Copper and Manganese.

Overall, it has a good source to help weight loss. Good for me though!  :)

I used two of them to make Chinese style soup, with carrot, goji berry and apple. It was not only good taste, even it was good for our health as well.

Masoor Dal Curry with Beetroot Leaves

Ingredient: 

  • 1 cup Masoor Dal, 
  • 3 cups Fresh Beetroot leaves
  • 1 cup Cooked chunky Beetroot
  • 1 Sweet potato, medium size, chunky chopped
  • 1 tbsp Fresh ginger, finely chopped
  • 1 1/2 tsp Cumin seeds
  • 1 tsp Chilli powder
  • 2 tsp Curry powder
  • 1/2 tsp Ground Turmeric
  • 1/2 Lemon, juice only
  • 1 tbsp Vegetable oil
  • Sea salt to taste

Method: 

  1. Heat oil and add cumin seeds, let it cook for 1/2 minutes, add ginger, chilli powder, curry powder and turmeric, just make a quick stir.
  2. Add the masoor dal, beetroot leave, sweet potato and  the cooked beetroot, stir and cook for about 3 minutes, add enough water and bring to the boil, turn the heat down and get simmer for about 6 to 8 minutes until the dal get soft.
  3. Season it with salt and add lemon juice,  off heat and let it sit in the pan for few minutes, then serve.

Note: 

  • I took some of the chunky beetroot from the soup that I made,and add into this curry dish, they still so flavourful.
