Vegetarian Cottage/Shepherds Pie

Why do I say cottage/shepherds pie, they are different from each other, right?  I know! So let me explain it now, cottage pie uses minced beef and the shepherds pie uses minced lamb, right! But for vegetarian, we use minced quorn, so I don’t know it is cottage pie or shepherds pie? Anyway, those are not important, it’s still a  PIE, ok?  >=<

If for vegan, we can use smoked tofu or tempeh, just finely chop them until it looks like minced, that will do the same.

It really doesn’t matter about the ingredients and the quantity, just what you like and how much you can eat, but the two factor ingredients are the mince quorn and the potato. You can make the mince mixture more than the potato topping, or the other way round, make the potato topping more than the mince mixture. They are totally up to you!

But this is what I prepare for (roughly), serve two:  1 cup mince quorn; 2 cups frozen vegetables; 1 green chilli (about 2″ long); 2 fresh tomatoes, diced; 1 can of chopped tomatoes; 2 tsp dried mixed herbs, 1 small bunch of fresh basil, chopped; 1 tbsp tomato paste; 2 tsp worcester sauce; salt and black pepper.

For the topping: 3 large white potatoes; 1 tbsp soy butter; soy milk or almond milk enough to moisten the mash potato; 1/2 cup red Leicester cheese, grated.

  • Bring a pot of water to boil, peel the potato skin and chop into chunky size, boil in the hot water until soft.
  • At the meantime, fry the mince quorn with 1/2 tbsp of olive oil in a large frying pan, (you can add chopped onion and minced garlic now if you use ), cook for few minutes, or until the onion soft; add the chopped chilli, frozen vegetables and chopped fresh tomatoes, stir all the ingredients and follow the can tomatoes, basil, tomato paste and cook for another 5 to 8 minutes. Add the basil, worcester sauce and seasoning. Off heat and pour in a large oven-proof glass dish, spread it evenly.
  • Check the potatoes are soft enough and drain it, mash it until smooth or leave a little bit lumps is all up to you. Add the butter, grated cheese (reserve 1 tbsp for topping) and the milk, a little bit at a time until the potatoes moist enough.
  • Now spread all the mashed potatoes on top of the mince sauce, and sprinkle with the remaining grated cheese, put under the hot grill, and grill it turn under golden brown. Then serve hot!

  1. I never knew the difference between a cottage and shepherds pie. Your vegetarian version of either sounds delicious. Shepherds or Cottage pie is one of the ultimate comfort foods. Happy Holidays!

  2. Wow this is such a good idea. It looks so hearty and yummy. All I have to do is substitute the cheese for nutritional yeast to make it vegan friendly for me 😉 Thanks for sharing. Can’t wait to try it. Yum!
