Vegan Orange & Cranberry Pound Cake ~ 純素,無蛋,無奶製品,低糖

Can’t believe this cake can work out nicely and the orange fragrant beautifully. Honestly, it is my experiment, I always have a dream to create some cakes to suit some special food allergies or intolerances people, and even for diabetes as well.

I am so delighted with the result, the cake is light and not too dense, that’s what I mostly concern about it.

I performed a bunch of research, how to eliminate the sugar contents when we bake cakes or make dessert, especially the white sugar. If you like to get more about the bad points about white sugar to harm our health, click in here, you will find out more information.

That’s the reason why this cake came out, I use the mixture of banana (better to use the ripened banana) and the home-made apple sauce, maple syrup to create the natural sweetness. Meanwhile, I have added a little bit of lemon juice and a pinch of sea salt to bring all the flavour out.

The orange puree that’s I made without any sugar ( it is for my friend because she has diabetes, I have to look after her), you can add sugar when you make it, if you like (perfectly to use the organic and no-wax orange, if you can). Or you can use the marmalade to eliminate all the fussy work, it’s up to you, right?

For the Cake: 

  • 3 Ripened Banana, medium size, mashed
  • 2 tbsp Fresh lemon juice
  • 1/3 cup Applesauce
  • 1/2 cup Agave Nectar or Maple syrup
  • 2 cups or 240g Self-raising
  • 3/4 tsp Baking powder
  • 3/4 tsp Bicarbonate of Soda
  • 1/2 tsp Pink sea salt
  • 1 cup Orange Puree        ( can make it without sugar, if for diabetes)
  • 1/3 cup Dried cranberries

For the Orange puree:         (the orange puree recipe adapted from here)

  • 2 Oranges
  • Sugar   (optional, if add sugar, it can use as marmalade)

Method For the Orange puree:

  • Rub the orange skin with sea salt, wash with clean water, add in a pot, fill with water until it covers the whole orange, bring to the boil and simmer until it can easily poke in with a stick. Off heat and drain the water, let it cool down, but still warm and cut into a chunky size with the skin, put in the food processor (now you can add sugar into the orange if you like it sweet), work with high speed until it’s smooth like a puree. It can store in an airtight container and keep in the fridge.

Method For the Cake: 

  1. Preheat the oven to 375°F/190°C/170°C (fan oven), or gas mark 5. Line the baking tin.
  2. Mash the banana, mix the lemon juice into it, add the applesauce, orange puree, and maple syrup together, set aside.
  3. Sieve the flour, baking powder, bicarbonate of soda and salt together, take one teaspoon of the flour, mix in the cranberries.
  4. Use the spatula slightly fold all the dry ingredients into the banana mixture until well incorporate.
  5. Pour into the baking tin, bake in the hot oven for around 50 to 60 minutes until golden brown.
  6. Cool down on a wire rack, serve warm with a spread of marmalade. Yummy!
