No-Bake Easter Coconut Nest Filled with Chocolate Eggs ~ Vegan friendly

There are lots of daffodils all over the side road, park, neighbours’s front garden, even my back garden is blooming beautifully.

It is spring time??? Yes! At last! But, we have been waiting for so long.

This recipe was inspired from one of my favourite blogger: chewoutloud. Her nest was beautifully made. I wish mine won’t disappoint her.

No-Bake Easter Coconut Nest Filled with Chocolate Eggs ~ Vegan friendly

Ingredient: 

  • 1/4 cup Shredded unsweetened coconut flakes
  • 1/4 cup Almond flour
  • 1 tbsp Maple syrup or Agave Nectar
  • 1 tbsp Coconut oil, melted
  • Drop of Vanilla extract
  • Pinch of Pink sea salt

Topping:

  • Nutella spread or Vegan chocolate spread
  • Bag of mini chocolate eggs for decoration, (optional, get the non-dairy chocolate eggs for vegan friendly)

Method:

  1. Combine all ingredients in a mixing bowl, mix well combined to form a dough.
  2. Roll into balls and use fingers to press in the middle to form a nest shape. Set aside.
  3. Melt the chocolate spread and put one teaspoon on the middle of the nest.
  4. Top with few mini chocolate eggs, done!
