Vegan Spiced Pear Pound Cake

Around this two weeks, have you notice the weather is changing? During the morning and evening, the temperature drops down a lot. The sky gets more grey than the bright sunny day. When I walk on the streets, trees on both sides turn into yellowish or brownish silently.

Yes, autumn has arrive already. Summer and autumn are my favourite seasons. Cause I can enjoy most of the sunny days, warm weather and flowers. Autumn, I love to see the beautiful scenery of trees and their leaves. The multicolour of red, yellow, brown and some green among them. How wonderful! How romantic!

Using fresh fruits or berries to make cake is my favourite. They’re not only sweet, moist and full of goodness. Actually, lots of fruits and berries can use in cake making. If you have any pears, apples, bananas that are getting a little soft, feel free to use them up. And you can reduce the sugar content to be a bit more healthy.
Also, I love to make applesauce during the fall season. Because I can get lots juicy and crunchy apples from my friend’s orchard. This year, I have some pears from them as well. Thank you, my dear friend!
For this moist pear cake, I add some spices for extra taste. Also, I create a layer of streusel topping with walnuts as well. For a snack time, top with a scoop of vegan ice cream. It is not a crazy idea! I recommend it to all of you, try it! Probably, you will get what I feel. Scrumptious!🙂

Vegan Spiced Pear Pound Cake

Ingredient: 
For the streusel topping: 
  • 3 tbsp Plain flour
  • 2 tbsp Brown sugar
  • 2-3 tsbp Vegan butter
  • 1/2 tsp Ground cinnampn
  • 3 tbsp Chopped walnuts
Method: 
  1. Slightly mix all ingredients together like the way to prepare crumbles. Chill in the fridge when you prepare the cake batter.

For the Cake batter: 

  • 1½ cup flour
  • 1/3 cup Molasses sugar
  • 3/4 cup apple butter or applesauce
  • ½ cup vegan butter or coconut oil, (I use my home-made vegan butter)
  • 1/2 teaspoon cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground Allspice
  • Pinch of Pink salt
  • 1/2 tsp baking powder
  • 1/2 tsp Bicarbonate of soda
  • 2 tsp Apple cider vinegar
  • 1 tsp vanilla extract
  • ½ cup almond milk or any nut milk of your choice
  • 3 pears, peeled and diced small

 Method:

  1. Preheat oven to 350°F/ 180°C/ 160°C fan oven.
  2. Beat butter and sugar until creamy.
  3. Add applesauce, vanilla, and milk and blend until smooth.
  4. Mix together flour, baking powder, all of the spices and pinch of salt.
  5. Stir flour mixture into butter mixture.
  6. Stir 3/4 of the chopped pears and mix together.
  7. Pour batter into a 9×5 inch loaf pan.
  8. Sprinkle remaining pears pieces over the top and press lightly into batter.
  9. Sprinkle the chilled streusel mixture on top evenly.
  10. Bake for about 40-45 minutes or until toothpick comes out clean.
  11. Serve with a dollop of vegan ice cream. Enjoy!
