Today’s weather was  so good, 24°C to 26°C~ warm and sunny! I think it is the summer that we longed for. Yay, it comes at last!

But the news said the weather in America will reach to 113°F/ 45°C, such too hot, I wish everyone stay in the shade and try not  to expose under the sun for too long, in case it will get sunstroke!

So, for this reason, we need some iced cold drink or dessert to treat ourselves. And now MANGO is the most seasonal fruits on the market, and the price is cheaper overall the year.

Vegan Raspberry Jelly ~ 覆盆子果凍

I think I did explain this Konjac jelly powder before, it is a bit different from the plain Konjac powder. it’s good for making jelly.

Konjac jelly powder (蒟蒻果凍粉) is good for making jelly, but Konjac powder 魔芋粉 or  蒟蒻粉 ( also known as Konjac Glucomannan powder ) is the type of starch thickener, like the cornstarch, it is natural, odorless soluble fiber that is found in the konjac plant. The konjac Glucomannan is the most viscous food gum in nature. It has about ten times the viscosity than cornstarch. But it is not like cornstarch, which does not contain starch and sugar, it does not have calories.

Spiced Tomato Chutney

Summer time was gone, and the fall season was landed quietly. You can see lots of falling leaves was already turn into yellow, brown or red, all  lying outside the road, in the park, up to the hill or in our garden, it is a very calm, peaceful  and quite romantic feeling! Actually I quite like autumn scenery, it is a very beautiful picture!

This summer haven’t got many hot days, only 2 or 3 days that all I can remember it. My garden’s vegetable plants are lack of good sunshine, all the tomato plants are still green, they hanging over there, but can’t get any hot weather to ripen them, it look a bit sad! So I decided to pick them back to my kitchen to avoid the damage of the first frost come.

Now, I turn this green tomato into my Spiced Tomato Chutney.

Ingredient:

  1. Green tomato                                     400g
  2. Onion                                                  300g (optional)
  3. Raisins                                                100g
  4. Granny smith apple                            1 large one
  5. Mustard seed                                      4 g
  6. Brown sugar                                       100g
  7. Sea salt                                               3/4 tsp
  8. Cayenne pepper                                  1/2 tsp
  9. Malt vinegar                                         150g

Method:

  • Put all the ingredients into a large saucepan over medium heat and bring to the boil.
  • Stir occasionally until the sugar has dissolved, turn down the heat to low, let it simmer for about 30 minutes, until thicken. Off heat and cool, then transfer the mixture to a sterilised jar and seal.

Note:

  • If you don’t like spicy, skip the cayenne pepper, or try to put 1 tsp of ground ginger.
  • I made this spicy chutney for my family, they love to have this tomato chutney with their roast pork or turkey.
  • If anyone know which is the best way to serve with this spicy chutney, please put on the comment and let me know, thanks!
