Do you remember the vegan cheddar cheese that I made before? The cheese is not only melt-able, and also slice-able. And today, the cheese is revamped by the Bunny Kitchen, 10-minute vegan cheese again.

The original recipe was shared by the Vegan Society. But Poppy slightly updates the recipe, that makes it even simpler to prepare. And a few more options to increase the cheesy tang and seasoned so well.

The cheese has more flavor that I like it so much! She suggests using Kappa carrageenan for a firm cheese. Even without the freezer that will slice and grate perfectly. But this ‘Kappa carrageenan’ is a bit expensive for me to afford. So I adapted to use the other option: ‘veg-gel’ instead. It still works well after I put the cheese in the freezer until it’s firm.

Vegan Sweet Potato & Spinach Macaroni Cheese

I was getting inspired by the Pink Rose Bakery: Sweet potato & spinach pasta. The two main key ingredients just fits in my favourite list.

If you have been with me for a while, you’ll understand how I love them. That’s why this post is here for today!

Nothing much to say and can’t find the word to depict it, only keep digging in the dish and lick clean all the sauce.

Vegan Sweet Potato & Spinach Macaroni Cheese 

Ingredient:            Serve 2 to 3 

  • 1 medium size Sweet Potato
  • 100g Fresh Spinach, washed
  • 1 tsp Ground Paprika
  • 1 tsp Hot sauce     (I use tobasco sauce)
  • 1 tsp Tomato paste
  • 1/2 tsp Ground turmeric
  • 1 tsp Miso paste
  • 1/2 cup Rice milk or Almond milk
  • 200g Dry Macaroni
  • Pink Sea salt and Black pepper for seasoning
  • Vegan nutritional yeast flakes for topping

Vegan Sweet Potato & Spinach Macaroni Cheese

Method:

  1. Wash the sweet potato and prick the skin with a fork, cook in the microwave until it soft, peel off the skin and mash it.
  2. Meanwhile, cook your pasta until al dente, reserving some of the starchy pasta water for the sauce.
  3. Add milk into a saucepan over medium low heat, add tomato paste, miso paste, bring it to boil, add the mashed sweet potato and combine into the sauce, add the paprika, hot sauce, turmeric and season with salt and pepper. Now you may adjust the sauce thinner if it is getting too thick by adding a bit of the starchy pasta water at a time to reach to your consistency.
  4. Add spinach and quick stir with the sauce, then add the main ingredient: cooked macaroni and toss all together, taste and adjust the seasonings, top with vegan nutritional yeast flakes, then serve.

Note: 

  • Feel free to swap the spinach with the kale or other veg that you like.
  • Use rice milk or nut milk make the sauce more creamy, if you think it is too much, just add water should be fine.

One of my kids always ask me to make this pancake for them, of course I love to make them happy, it is my  preasure!

Sweet potato appears in our kitchen all  year round, we love it so much. We can make it into ‘tong sui‘ literally translated as “sugar water” 糖水.  Sometimes, my family bake the oven chips but  I prefer to take one or two sweet potato and  wrap with foil and bake in the oven like the baked  jacket potato.

Sweet Potato are healthier than the potato, even the nutritionist said so!  It provides 400% for your daily requirement of Vitamin A.  They also have more Vitamin C, fewer calories, more fibre and fewer total carbs than the normal white potatoes, despite more sugar.

I made corn fritters before, was nice, but I haven’t try sweet potato into my fritters, and I think sweet potato are better than potato, at least less carbonhydrate, right? Don’t know yet, will find out later!

Used the grated sweet potato is not easy than the normal potato, it was softer, when I tried to flip over for another side, they’re quite sloppy. But the taste was much better than potato, have a try, you can feel the good taste.

This time, I added a bit of chilli to make it but not too much ( cause I can’t eat too spicy ), the result that came out, was surprised to suit me. So, I can start to get used to a bit spicy in my cooking, yeah, not too much, just gradually build up. hehe.

If you think the batter was a bit thinner or runny, add 1 teaspoon of flour each time to reach the consistency that you desire. Don’t get too doughy.

Sweet Potato Fritters with Corn

Ingredient: 

  •   200 to 250g Sweet potato
  •   1 Small red chilli
  •   Small bunch of fresh coriander
  •   45g more of less, Plain flour
  •   150g Sweetcorn, fresh or frozen or canned
  •   2 eggs
  •   4 tbsp  Vegetable oil
  •   Salt and Black pepper

Method: 

  1. Peeled the sweet potato, and grated, sat in a bowl with water cover it, set aside.
  2. Chopped the coriander and red chilli finely, washed hands afterward.
  3. Cracked the eggs into a large mixing bowl, add oil and flour, whisk it until without any lumps, add the chilli, coriander, sweetcorn and drained sweet potato, mix it all evenly. Season well with salt and black pepper.
  4. Pit a tablespoon oil into a hot frying pan, take one large tablespoon of the batter onto the pan and start to fry for both sides, just few minutes for each side until you can see the fritters turn into golden brown and turn the other side. Repeat all the remaining batter.

  • It could be a nice starter or snack, even you can make it smaller size for the fingers food for party.
  • If for children, skip the chilli, in case it will be too spicy for them.

Sweet potato is my kid’s flavorite root vegetale, just come second of his choice ( first choice is potato ), of course I am too. But I put the sweet potato to my first choice, just the other way round, hehe 🙂

Sweet potato has more fibre than potato and the carbonate content is much less, even doctor encourge people who has diabetes, can have sweet potato in their meal to substitute the normal potato!  . And sweet potatoes are an excellent source of vitamin A, vitamon C and  manganese. Storage proteins in sweet potato also have important antioxidant properties. All of them are good for our health, so try to have more in our meal.
