I need to make this cake definitely, not only I really like banana and walnut, the main reason was I bought a big pack of banana from the sale shelf. :p  Silly am I?

Anyway,  banana was good for our health, they’re low in saturated fat, sodium, no cholesterol and very high in dietary fiber, vitamin B6 and C, also high in potassium as well. But it contains lots of fruit sugar, so be careful if you have diabetes problem, eat less please.

And the walnut, it has no cholesterol, very low in sodium and sugar, and rich source of energy , contain lots of health benefiting nutrients, minerals, antioxidants and vitamins, high in manganese content, it also benefit for our brain,  7 nuts has only 183 calories. Eating just as much as 25 g each day provides about 90% of RDI (recommended daily intake) of omega-3 fatty acids.

That’s why I always love to add fruits into my cake recipes, and it make the cake more moist and soft.

Banana and Walnut Cake

Ingredient: 

  •   250g Ripen banana, peeled and mashed
  •   135ml Sunflower oil or any kind of vegetable oil
  •   75g Light brown sugar
  •   2 Eggs
  •   192g Self-raising flour
  •   1/2 tsp Baking powder
  •   1/2 tsp Bicarbonate of soda
  •   38ml Evaporated milk
  •   1/4 tsp Vanilla extract       ( optional )

Method:

  1.  Preheat the oven to 325°F/160°C/140°C (fan oven), or gas mark 3.
  2. Beat sugar and eggs together until pale and creamy.
  3. Add milk, soil, mashed banana and vanilla extract, mix well until all incorporated.
  4. Sieved all the dry ingredients into the banana mixture, use spatular to fold the ingredients until without any lumps.
  5. Pour into a greased and lined loaf tin, and bake into the preheat oven for about 35 to 40 minutes, reduce 20 degree of the temperature  and bake for another 5 minutes until cook and golden brown. Cool down on a wire rack to serve.

Note:  Remember make a cup of coffee or tea when you’re waiting for the cake to cool down. Such a moist and delicious cake.
